Avocado & Cucumber Salad
This Avocado & Cucumber Salad is the perfect healthy salad recipe for warm days or fresh starts. This recipe from Eating Well arrived at my door in April last year and I have adored this simple cucumber salad ever since. It is so flavorful and bright and takes only five minutes to prep, making it the perfect solution for a last minute get together. It pairs beautifully with grilled meats or fish (like my personal fave, grilled Tuna). Try this salad tonight and I guarantee you’ll make it on repeat all Summer long!

Cucumber Salad Ingredients
- 1 medium shallot, thinly sliced crosswise and separated into rings
- 3 tablespoons fresh lime juice
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon thinly sliced fresh mint
- 1 tablespoon thinly sliced fresh basil
- ½ teaspoon salt
- 1 English cucumber, thinly sliced
- 1 ripe avocado, halved, pitted, and sliced crosswise
Step by Step Instructions
Step 1
Toss shallot rings with lime juice in a large bowl; let stand until softened, about 10 minutes. Whisk in oil, mint, basil and salt.
Step 2
Add cucumber; toss to coat. Let the cucumber marinate in the dressing, tossing occasionally, until softened, about 10 minutes.
Step 3
Using a slotted spoon, transfer the cucumber to a platter; top with avocado. Drizzle the dressing over the salad. Serve immediately.
