Simple Banana Bread Easy

This simple banana bread is easy as it is delicious. It is named after our hilarious dog, Sofia, who loves bananas more than just about anything. (She may actually be some sort of monkey, we’re not totally sure.)

But don’t let this easy banana bread’s simplicity fool you, she is far from basic. Incredibly moist, perfectly sweet, and best served warm with a slather of salted butter.

Banana Bread Easy – Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 1/2 cup (1 stick) butter, room temperature
  • 3/4 cup (packed) dark brown sugar
  • 2 large eggs, lightly beaten
  • 4 large bananas, mashed (about 2 cups or so)

Cook’s note:

I use half all-purpose and half whole wheat pastry flour for this banana bread easy recipe, as I like the subtle nuttiness that the whole wheat flour adds. If you don’t have the pastry flour, simply use 2 cups of all-purpose flour for an equally delicious result.

Step by Step Instructions

Step 1

Preheat oven to 350°. Grease a loaf pan with butter or non-stick spray; set aside. 

Step 2

Whisk flours, salt, and baking soda in a small bowl; set aside. In a separate bowl, cream together butter and brown sugar until well blended. Add beaten eggs and mashed banana and mix until well combined.

Step 3

Gradually add the dry ingredients to the wet, mixing just to combine. Pour batter into prepared loaf pan.

Step 4

Bake for 1 hour to 1 hour & 5 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
