Ingredients

  • 1 1 lb Bag Penne Pasta
  • 1/4 Cup Olive Oil
  • 2 Cloves Garlic, minced
  • 1/2 Cup Sun Dried Tomatoes, Julienned
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Basil
  • 1 12 oz Bag Fresh Pre-Chopped Broccoli Florets (I use the Organic variety from Trader Joe's or Whole Foods; if you can't find pre-chopped, simply chop a small head of broccoli and place in a microwave-safe dish)
  • 2 Tbsp Pepper Plant Original Hot Sauce (Cholula is a nice substitute if you can't find Pepper Plant)
  • 1/4 Cup Grated Parmesan, plus more for serving

Instructions

  • Cook the pasta according to package instructions.
  • While the pasta is cooking, cut off one corner of the bag of broccoli and microwave on medium-high for 3 minutes to steam. Set aside.
  • Heat olive oil in a large flat-bottom skillet over low to medium heat. Cook the garlic until fragrant, about 1-2 minutes. Add the sun dried tomatoes, oregano, and basil and cook, stirring frequently, for 3-4 minutes.

  • Drain pasta well and add to the pan. Remove from heat and add the parmesan cheese and stir to combine. Serve immediately with additional parmesan cheese to taste.

Tip: the spiciness may be adjusted according to taste. Feel free to add Pepper Plant to taste – it’s ok, I like it hot too!
