This pasta with sun-dried tomatoes & broccoli is the perfect quick and healthy weeknight dinner. A vegetarian main that’s both healthy and comforting and comes together in a snap, thanks to the use of prep-saving ingredients like pre-chopped broccoli florets.
I’ve been making this pasta with sun-dried tomatoes recipe for the last 20 years and it is a staple in my home. The Pepper Plant is literally the secret sauce in this one – if you can’t find it, look for a garlic-based hot sauce instead.
Let’s get started on this easy pasta with sun-dried tomatoes:
Pasta With Sun-Dried Tomatoes & Broccoli
An easy and healthy pasta recipe that's perfect for any weeknight. This pasta with sun-dried tomatoes is perfectly balanced and so delicious. A vegetarian main dish that your whole family will love!
Ingredients
- 1 1 lb Bag Penne Pasta
- 1/4 Cup Olive Oil
- 2 Cloves Garlic, minced
- 1/2 Cup Sun Dried Tomatoes, Julienned
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Basil
- 1 12 oz Bag Fresh Pre-Chopped Broccoli Florets (I use the Organic variety from Trader Joe's or Whole Foods; if you can't find pre-chopped, simply chop a small head of broccoli and place in a microwave-safe dish)
- 2 Tbsp Pepper Plant Original Hot Sauce (Cholula is a nice substitute if you can't find Pepper Plant)
- 1/4 Cup Grated Parmesan, plus more for serving
Instructions
- Cook the pasta according to package instructions.
- While the pasta is cooking, cut off one corner of the bag of broccoli and microwave on medium-high for 3 minutes to steam. Set aside.
- Heat olive oil in a large flat-bottom skillet over low to medium heat. Cook the garlic until fragrant, about 1-2 minutes. Add the sun dried tomatoes, oregano, and basil and cook, stirring frequently, for 3-4 minutes.
- Add the steamed broccoli and the hot sauce to the pan, stirring well to incorporate. Continue to cook over low heat, stirring occasionally, until the pasta is finished, about 2-3 minutes.
- Drain pasta well and add to the pan. Remove from heat and add the parmesan cheese and stir to combine. Serve immediately with additional parmesan cheese to taste.
Tip: the spiciness may be adjusted according to taste. Feel free to add Pepper Plant to taste – it’s ok, I like it hot too!
