Cheater Chicken Taquito Enchiladas

Why call these Cheater Chicken Taquito Enchiladas? Well, these super-easy “taquito enchiladas” have all the gooey cheese and sauciness of a traditional chicken enchilada recipe, but they are ready in less than half the time!

My sister Katrina is the queen of semi-homemade recipes, and this one comes to us straight from her kitchen. This easy enchilada recipe uses Trader Joe’s taquitos paired with pre-prepped ingredients so it comes together in a flash. The best part is you can customize this taquito enchiladas recipe depending on your preferences and what you’ve already got in your fridge.

Who would’ve thought that enchiladas made with frozen taquitos could be so delicious? I’m here for it.

Taquito Enchiladas – Ingredients

  • 20 Trader Joe’s Frozen Chicken Taquitos
  • 1 12 oz Jar Enchilada Sauce
  • 1 12 oz Jar Trader Joe’s Double Roasted Salsa
  • 2 Cups Shredded Monterey Jack Cheese (Trader Joe’s Mexican blend works well too)
  • 2 Green Onions, Sliced
  • 1/2 tsp Chili Powder
  • Guacamole (Get Recipe)
  • Sour Cream, for serving

Cook’s Notes:

Any type of Trader Joe’s taquitos will work in this recipe – I have made these taquito enchiladas with black bean taquitos as well and they are equally delicious!

For the toppings, I also love to use jalapeños or black olives in place of the green onions. Get creative!

Step by Step Instructions

Step 1

Preheat oven to 425°. Combine enchilada sauce and salsa. Coat the bottom of a 9×13 pan with sauce. Remove Trader Joe’s taquitos from packaging and place in a single layer in pan. Pour remaining sauce mixture over taquitos.

Step 2

Sprinkle cheese generously over the top of the taquitos, covering evenly. Spread green onions evenly over the cheese. Sprinkle with chili powder. Place taquito enchiladas on the center rack of oven and bake for 30 minutes.

Step 3

While enchiladas are baking, prepare the Guacamolecombine 3 ripe avocados, about 1/4 cup diced red onion, half a jalapeño, diced, about 1/3 cup chopped cilantro, and juice of half a lime in a small bowl. Mash ingredients together with a fork. Salt and pepper to taste and add lime juice as needed.

Step 4

Once the cheese begins to brown and the internal temperature reaches 165°, remove taquito enchiladas from oven and cool for 5 minutes before serving. Serve with guacamole and sour cream, if desired.

These enchiladas really should be called Trader Joe's Taquito Enchiladas because they are made exclusively from Trader Joe's products! The Trader Joe's taquitos are so good in this recipe you might just think these taquito enchiladas took all day! A delicious, easy, and versatile semi-homemade recipe!
