Lime Coconut Loaf Cake
This Lime Coconut Loaf Cake will have you dreaming of an island getaway (if you’re not already doing so). This lime coconut loaf cake is lightly sweet, moist, and perfect for breakfast or dessert (aka my favorite kind of cake).
This easy cake recipe is not only free of refined sugar or butter, but it’s also super quick to mix up. All you need are a couple of bowls! What I love about this lime coconut loaf cake is that it’s full of nutrient-rich ingredients like coconut oil, greek yogurt, and honey. It’s the perfect treat when you want to get away from it all (without any regret).

Lime Coconut Loaf Cake Ingredients
- Non-Stick Cooking Spray
- 1 1/2 cups All-Purpose Flour, plus more for dusting
- 2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 3/4 tsp Kosher Salt
- 1 Tbsp Lime Zest
- 1/2 cup Coconut Oil
- 2/3 cup Clover Honey
- 1/2 cup Plain Greek Yogurt
- 2 Large Eggs
- 1/2 tsp Vanilla Extract
- 1/4 cup Shredded Coconut (unsweetened)
- 1/2 cup Powdered Sugar (optional)*
- 1-2 Tbsp Lime Juice (optional)*
Cook’s Notes:
Honey: if you don’t have honey on hand, agave nectar works beautifully in this coconut loaf cake recipe as well. Simply use equal parts agave instead.
Greek Yogurt: any type of plain greek yogurt may be used in this coconut loaf cake. I use either 2% or whole milk yogurt and both work well. Just be sure to use Greek yogurt.
Coconut Oil: if you don’t have coconut oil, any vegetable oil will work here as well. The cake will have less coconut flavor but will be delicious. I like to use Avocado oil as it has a very mild flavor and bakes up beautifully.
*Optional Glaze: this lime coconut loaf cake has zero refined sugar and is lightly sweet. It makes a perfect breakfast coffee cake or snack. For a sweeter cake with an extra lime punch, I like to add a glaze to the top of the cake. Simply whisk together 1/2 cup of powdered sugar and 1-2 tablespoons of lime juice (to taste) and drizzle over the cake after it has cooled.
Step by Step Instructions
Step 1
Preheat oven to 325 degrees. Spray loaf pan with non-stick cooking spray and coat with flour, shaking to release excess. Set aside.
Step 2
Whisk flour, baking powder, baking soda, and salt together in a medium bowl. Set aside.
Step 3
In a large mixing bowl whisk the lime zest and honey. Add coconut oil, greek yogurt, eggs, and vanilla extract and whisk until combined. Mixture may be lumpy.
Step 4
Gradually fold in dry ingredients and stir just to combine. Fold in shredded coconut. Batter will be thick. Pour batter into loaf pan, smoothing the top. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan for 10 minutes, then place on wire rack to cool completely. If desired, whisk powdered sugar and lime juice until smooth. Pour over cooled cake.
