The Best Banana Bread Ever – Ingredients
- 2 cups whole wheat pastry flour
- 1 tsp kosher salt (or 1/2 tsp table salt)
- 1 tsp baking soda
- 2 Tbsp flaxseed meal
- 1/2 cup olive oil
- 1 cup dark brown sugar, packed
- 2 large eggs, lightly beaten
- 3 large bananas, mashed (about 1 1/2 cups or so)
- 1/2 cup plain Greek yogurt
Cook’s note:
Don’t worry, you can still make the best banana bread ever even if you don’t have whole wheat pastry flour. Simply use the same measurement of all-purpose flour and the result will be equally delicious.
Step by Step Instructions
Step 1
Preheat oven to 350°. Grease a loaf pan with butter or non-stick spray; set aside.
Step 2
Whisk flour, salt, baking soda, and flaxseed meal in a small bowl; set aside. In a separate large bowl, mix olive oil and brown sugar until well blended. Add beaten eggs, mashed banana, and Greek yogurt and mix until well combined.
Step 3
Gradually add the dry ingredients to the wet, mixing just to combine. Pour batter into prepared loaf pan.
Step 4
Bake for 1 hour to 1 hour & 5 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
