Bacon & Herb Roasted Turkey Breast Recipe

This Turkey breast is so incredibly moist and so easy to prepare! The perfect Thanksgiving Turkey recipe for a small crowd. I have made this roasted turkey breast recipe countless times and it is delicious every time!

Ingredients
 

  • 3 Strips Thick-Cut Bacon
  • 1 1/2 Tbsp Minced Garlic
  • 1 Tbsp Chopped Fresh Sage (Tip: around the holidays, Trader Joe's sells a fresh herb bundle that contains most of the herbs in this recipe – it's a more cost-effective option to buying separately)
  • 1 1/2 tsp Chopped Fresh Rosemary
  • 1 tsp Chopped Fresh Oregano
  • 1 tsp Chopped Fresh Thyme
  • 3 Tbsp Salted Butter, softened
  • 2 Tbsp Kosher Salt
  • 1 1/2 tsp Freshly Ground Black Pepper
  • 1 6 -8 lb Turkey Breast, bone in (Rinsed and patted dry)

Instructions
 

  • Preheat oven to 375 Degrees. Line your roasting pan, or baking dish, with parchment paper and/or aluminum foil for easy clean up.
  • Cook bacon in a medium skillet over medium heat, until crisp. Transfer to a paper towel-lined plate to drain, reserving about 1 tablespoon bacon fat. Allow bacon to cool.
  • Finely chop bacon and transfer to a small bowl. Add garlic, sage, rosemary, oregano, thyme, butter, 1 teaspoon salt, and 1/2 teaspoon pepper to bowl. Mix until a paste is formed.
  • Using your fingers, gently loosen the skin on both sides of the turkey breast so that it is separated from the meat. Divide herb paste in half and gently spread on each half of the breast, under the skin. Season turkey with remaining teaspoon of salt and pepper. Brush skin with reserved bacon fat.
  • Place turkey in prepared pan and roast, uncovered, until a thermometer inserted into the thickest portion of the breast registers 165 degrees. Cooking time will vary depending on oven, approximately 1 hour and 30 minutes to 2 hours.
  • Remove turkey from oven and allow to rest for 20 minutes before carving. Serve with White Wine Gravy.
