Grilled Cheese with Arugula & Tomato Jam

Spotted the new Sweet & Savory Tomato Spread at Trader Joe's but have no idea what to do with it? I got you. Make this healthyish Grilled Cheese sandwich and savor its sweet and savory goodness during a much needed lunch break. ????

- 3 tbsp Butter
- 4 slices Multigrain Bread (I use Dave's Killer 21-Whole Grains)
- 3-4 slices Sharp Cheddar Cheese (My favorite is the Organic New Zealand White Cheddar from TJ's)
- 2 tbsp Trader Joe's Tomato Spread
- 2 tbsp Dijon or Whole Grain Mustard
- 2 handfuls Arugula
Spread tomato jam onto one side of each of two slices of bread. Spread mustard onto one side of the other two slices.
Layer the cheese slices and arugula onto the slice of bread with tomato jam and top with the mustard slice.
Add half the butter to a large skillet and heat over medium-low heat until butter is mostly melted. Add the sandwiches to the pan and use a spatula to move them around and ensure even distribution of butter.
When the first side is browned add the remaining butter, flip the sandwiches, and continue cooking until the cheese is fully melted and second side is browned. Once browned remove from pan, cut on the diagonal, and serve.
