Instructions
In a small bowl, combine shredded cabbage and chopped cilantro (about a 1 to 0.5 ratio). Add the juice of half a lime and mix to combine. Set aside. Preheat oven and cook Fish Nuggets according to package instructions.
While the fish cooks, make the Guacamole: combine 3 ripe avocados, about 1/4 cup diced red onion, half a jalapeño, diced, about 1/3 cup chopped cilantro, and juice of half a lime in a small bowl. Mash ingredients together with a fork. Salt and pepper to taste and add lime juice as needed.
Heat a small skillet over medium heat. Place a tortilla in the pan and heat on each side for approximately 30 seconds. Repeat with remaining tortillas.
When the fish is ready, place 2 fish nuggets in a warm tortilla. Top with guacamole, shredded cabbage mixture, and Jalapeño Sauce to taste. Serve with salsa and tortilla chips, and a side of refried beans! And, of course, any leftover Guacamole!
