Passion Fruit Cocktail

This skinny Passion Fruit cocktail will bring the tropics to you! This is a lighter version of a classic Mai Tai recipe, with 1/4 the sugar! Finally a tropical cocktail you can feel good drinking! Cheers!

- 1 oz Passion Fruit Juice (see notes)
- 1 oz Orange Juice
- 4 oz (1/2 cup) Sparkling Water (see notes)
- 2 oz Dark Rum (see notes)
- 1 Lime, sliced into wedges
- Ice Cubes
If using fresh Passion Fruit: cut the top from the fruit and scoop the pulp, seeds, and juice into a strainer over a small bowl. Gently press the pulp and seeds into the strainer to ensure all juice is released. Repeat as necessary.
Fill a cocktail glass with ice. This cocktail will be made with a layered effect, as seen in the photo. This may also be made in a shaker and poured over ice.
Add passion fruit and orange juices to the glass. Slowly pour the sparkling water into the glass to avoid mixing with the juices.
Using the back of a spoon, slowly pour the rum over the spoon into the glass of ice, water, and juices, allowing it to float on the top. Garnish glass with a lime wedge and a straw for stirring.
Passion Fruit: I used fresh Passion Fruit in this recipe because I had several on hand from a neighbor. Passion Fruit juice or nectar will work perfectly as well.
Sparkling Water: I prefer LaCroix Coconut flavored sparkling water in this passion fruit cocktail but unflavored, lime, or orange would work well here also.
Rum: my favorite brand of rum is Kailoa from Kauai. I use the Kailoa Dark Rum here, but any dark rum would be delicious. You could also use coconut rum if you prefer.
