Ingredients
 

  • 2 cups Whole Wheat Pastry Flour
  • 1 tsp Kosher Salt (or 1/2 tsp table salt)
  • 1 tsp Baking Soda
  • 2 tbsp Flaxseed Meal
  • 1/2 cup Olive Oil
  • 1 cup Dark Brown Sugar, packed
  • 2 Large Eggs, lightly beaten
  • 3 Large Bananas, mashed (about 1 1/2 cups)
  • 1/2 cup Plain Greek Yogurt

Instructions
 

  • Preheat oven to 350°. Grease a loaf pan with butter or non-stick spray; set aside. 
  • Whisk flour, salt, baking soda, and flaxseed meal in a small bowl; set aside. In a separate large bowl, mix olive oil and brown sugar until well blended. Add beaten eggs, mashed banana, and Greek yogurt and mix until well combined.
  • Gradually add the dry ingredients to the wet, mixing just to combine. Pour batter into prepared loaf pan.
  • Bake for 1 hour to 1 hour & 5 minutes, or until a toothpick inserted into the center of the bread comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. 

Cook's Notes

If you don't have whole wheat pastry flour, all-purpose will work just as well in this easy banana bread. Simply use the same measurement and the result will be equally delicious.
