Ingredients
 

  • 2 cups All-Purpose Flour
  • 1 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Kosher Salt
  • 1 1/2 cups Granulated Sugar, divided
  • 12 tbsp Butter (1 1/2 sticks)
  • 1 large Egg
  • 1/4 cup Molasses

Instructions
 

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Pour 1/2 cup of sugar into a shallow bowl. Set aside.
  • Beat butter and remaining 1 cup of sugar in the bowl of an electric mixer. Add egg and beat until combined, then add molasses and beat again until fully combined. Reduce speed to low and gradually add dry ingredients.
  • Using your fingers, pinch about a tablespoon of dough and roll into a ball in your hands. Place in bowl of sugar and roll to coat.
  • Arrange dough balls on ungreased baking sheet about 2 inches apart. Bake (one cookie sheet at a time) for 10-15 minutes, or until tops have cracked and edges are just firm. Cool on a wire rack.

Cook's Notes

I use salted butter for this recipe because I like a little saltiness in my molasses cookies. If you prefer to reduce the salt, use unsalted instead for this chewy molasses cookie recipe.
