Ingredients
 

  • Non-Stick Cooking Spray
  • 1 1/2 cups All-Purpose Flour (plus more for dusting)
  • 2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 3/4 tsp Kosher Salt
  • 1 Tbsp Lime Zest
  • 1/2 cup Coconut Oil
  • 2/3 cup Clover Honey
  • 1/2 cup Greek Yogurt
  • 2 Large Eggs
  • 1/2 tsp Vanilla Extract
  • 1/4 cup Shredded Coconut (unsweetened)
  • 1/2 cup Powdered Sugar (optional)
  • 1-2 Tbsp Lime Juice (optional)

Instructions
 

  • Preheat oven to 325 degrees. Spray loaf pan with non-stick spray and sprinkle with flour. Shake to release excess. Set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Whisk lime zest, coconut oil, and honey together in a large bowl. Add greek yogurt, eggs, and vanilla and whisk until combined. Mixture may be lumpy.
  • Gradually fold in dry ingredients and mix until just combined. Fold in shredded coconut. Batter will be thick.
  • Pour batter into prepared loaf pan, smoothing the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in pan for 10-15 minutes, then place on a wire rack to cool completely. If desired, whisk powdered sugar and lime juice together until smooth. Pour over cooled cake.
