Ingredients
16ozFirm or Extra-Firm Tofu
2tbspSoy Sauce
2tbspRice Vinegar(or Mirin)
1tspToasted Sesame Oil
1/2tspFresh Ginger, minced
1Garlic Clove, minced
Instructions
Press the tofu: cut tofu into cubes (approx 1-inch square). Place them evenly on a flat surface (I use a cutting board) lined with paper towels. Cover with a layer of paper towels and set a flat baking sheet on top. Place a weight, such as a cast-iron pot or any heavy item, on the baking sheet and allow to sit for 15-20 minutes. Or, if desired, use a Tofu Press.
Combine remaining ingredients (soy sauce through garlic) in a small bowl. Allow to sit while tofu is pressing.
Once the tofu has been pressed place the cubes in a flat bottom dish, such as a baking dish or shallow bowl. Use a strainer to remove ginger and garlic solids from the marinade. Pour the strained marinade over the tofu and let sit for at least 15 minutes.
Preheat the Air Fryer to 400 degrees. Place the tofu cubes in the basket in a single layer, without letting them touch. Cook at 400 degrees for 10-13 minutes, shaking the pan occasionally after 10 minutes. Remove once tofu is golden and crispy. Repeat process as necessary, depending on your Air Fryer capacity.

Cook's Notes:I prefer firm tofu over extra-firm, but either work perfectly for this recipe. If using firm, repeat the pressing process twice to ensure all liquid is removed before frying.If you cannot find fresh ginger, ginger powder works great here too. Simply reduce the amount to 1/4 teaspoon if using powdered.
